About the Pilgrim Place Method for Introducing Plant-Based Dining Case Study:
This case study explores a method for assessing community interest and support for consistently offering plant-based entrΓ©es, then building demand for plant-based dishes prepared by dining services. The goal is to reduce meat consumption and the associated greenhouse gas emissions.
Objectives:
We hope to emulate the successful vegetarian potlucks of a previous decade which resulted in daily vegetarian dishes being offered by dining services. Vegans now will eat the vegetarian offering but prefer to avoid dairy such as cheese and milk and butter and thus would like to have more frequent plant-based entrees.
